SUNDAY BRUNCH: HOW TO MAKE THE PERFECT OMELETTE


’THERE IS SOMETHING BEAUTIFUL AND CHIC ABOUT WHIPPING TOGETHER A PERFECT OMELETTE ON A SUNDAY MORNING’

Lately I’ve been loving having brunch…breakfast just feels too early and lunch feels too soon. Brunch has been the ideal opportunity to get in my protein & veggies around 10/11 am.

If you keep staples like eggs, vegan butter, s&p, mushrooms, onions, and spinach in the kitchen there are many recipes you can make. But those items happen to be the main ingredients to create the perfect omelette.

FIRST: Set out your favorite cutting boards, small non-stick pan, small mixing bowl, veggie & eggshell scraps bowl, whisk, butter knife, spatula, and ingredients listed below. I like to have an extra small cutting board just for chopping onion. Because no matter how much you clean a cutting board, you can’t seem to get around the fact that your apples will end up tasting like onion.

SUNDAY BRUNCH PERFECT OMELETTE

THE BSS OMELETTE RECIPE

YOU’LL NEED, ALL ORGANIC:

+ 2-3 EGGS
HAPPY EGGS, HERITAGE

+ SMALL BOWL

+ WHISK

+ SALT/PEPPER

+ VEGAN BUTTER

+ MUSHROOMS

+ ONION

+ SPINACH

OPTIONAL TOPPINGS:

+ GREEN ONION

+ MICROGREENS

+ CHIVE VEGAN CREAM CHEESE
KITE HILL


+ Hot tip — pre chop your onion, mushroom, and spinach and crack your eggs into the small bowl and whisk the eggs. Put your veggie scraps & egg shells into your scraps bowl to save time going back and forth from the trash/compost.

Heat up your small non-stick pan with a little bit of butter enough to coat your pan. Add your chopped mushroom and onion to the pan and sauté it until the onion becomes more clear and the mushrooms brown a little. I like a whole slice of onion and 2-3 mushroom caps.

Then add some spinach to the pan and let it wilt a little bit. Sometimes you might need to add a little more butter at this point. Add the scrambled eggs.

Lift the pan and tilt the pan a little bit while lifting underneath each corner of the egg as it cooks. Repeat this step to each side of the pan and keep doing this until there is no more egg running down the sides.

Gently scoop under half of the omelette using the spatula and fold it in half, bring it to the center of the pan and let it cook just a little more.

That’s it! Plate your gorgeous omelette and add chopped green onion, microgreens, and little vegan cream cheese if you would like to. Its also delicious on it’s own.
